Ingredients
500 ml double cream |
2 tbsp brandy |
1 tbsp caster sugar |
1 tbsp stem ginger, chopped |
1 tbsp stem ginger sugar syrup |
150 g meringues, roughly chopped |
½ tsp groundnut oil |
4 tbsp dark chocolate, chopped |
Instructions
Whip the cream until stiff. Fold in the brandy, sugar, ginger and the syrup. Add the chopped meringue.
Grease a pudding tin with the groundnut oil. Pour in the mixture. Cover with aluminium foil and afterwards with cling film. Freeze overnight.
Remove from the freezer and allow to soften slightly in the refrigerator, for about 20 minutes.
Divide the snow queen onto 4 dessert plates and serve sprinkled with chocolate.
