Apple crumb coffee cake recipe details
Ingredients
For the cake: | |
225 g | plain flour |
100 g | caster sugar |
1 sachet | yeast, use fast rise or bread machine yeast in preference |
½ tsp | salt |
125 ml | milk and water – about 50/50 |
75 g | unsalted butter, softened |
2 large | eggs |
For the topping: | |
2 medium | cooking apples, peeled, cored and thinly sliced |
For the crumble topping: | |
65 g | sugar |
25 g | plain flour, sifted |
1 tsp | ground cinnamon |
3 tbsp | butter or margarine, chilled |
Instructions
In a large bowl, combine about a third of the flour with sugar, yeast and salt and mix until even.Heat the water with milk and butter in a small saucepan until very warm, about 50-55ºC, 120-130ºF. Gradually add to the dry ingredients, mixing thoroughly. Use a food mixer on medium speed if you wish, beating for 2 minutes. Scrape down the sides of the bowl. Add the eggs and another 50 g of flour and beat at high speed for a further 2 minutes. Scrape down the bowl sides and add the remaining flour to form a stiff batter.
Spread into a greased 9-inch, 22 cm square tin, evening out the mixture as best possible. Arrange the apple slices evenly on top.
To make the crumble topping:
In a medium bowl, mix together all the ingredients using a pastry mixer if possible. Otherwise use a food mixer on slow speed. Mix until crumbly. Spread evenly on top of the apples.
Cover the tin and leave in a warm place to rise for at least an hour until doubled in size.
Meantime, preheat the oven to Gas Mark 5, 190ºC, 375ºF.
Bake for 35-40 minutes or until done and the apples are tender and the topping is golden brown. Allow to cool in the tin for 10 minutes and then remove from the tin to cool on a wire rack.
Serve slightly warm or completely cold.
Variations:
If wished, replace the cooking apples with Granny Smiths or Golden Delicious.
Replace the cooking apples with 3 large, firm pears. I used 1 Comice and 2 others last autumn but cannot now recall the variety, using what was then available.
