Apple cranberry crisp recipe details
- Ingredients Topping:
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 3/4 stick chilled butter, cut into 1/4-inch bits
- 1/2 cup old-fashioned rolled oats
- 1/2 cup quality granola (preferably fat free)
- Filling:
- 8 tart apples, such as Granny Smith — peeled, cut, and cored into medium dice
- 2 Tablespoons fresh lemon juice (from about 1/2 medium lemon)
- 1 cup whole fresh cranberries
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1/4 cup orange juice
- 1 teaspoon cornstarch
Preheat the oven to 375 degrees. Lightly butter a shallow 9 x 9-inch baking dish. In the bowl of a food processor fitted with the metal blade, combine the sugar, flour, butter, and oats. Pulse until the mixture resembles coarse meal. Transfer the mixture to a mixing bowl and stir in the granola. Set aside.
In a medium bowl, combine the apples with the lemon juice. Add the cranberries, cinnamon, brown sugar, orange juice, and cornstarch; stir to blend. Pour the apple mixture into the prepared baking dish and sprinkle generously with the topping. Bake for 45 minutes or until the fruit mixture is bubbling and the topping is golden brown.
