Apple cranberry coffee cake recipe details
- Ingredients
- 1/3 cup honey
- 2 Tablespoons butter
- 1/2 cup unsweetened applesauce
- 1 egg
- 1 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 large tart apples, peeled and cored
- 1 cup whole cranberries
Beat honey, butter, and applesauce. Beat in egg. Add dry ingredients and beat till blended. Add 1/2 cup chopped apples and cranberries (reserve a few cranberries for topping). Beat on high for several minutes. Spread batter in microwave-safe greased pan. Arrange remaining apple in slices and cranberries on top. Sprinkle with sugar and cinnamon mixture. Microwave at 70% power for approximately 10 minutes. Cool and serve.
