Ingredients
4 | acorn squash, halved, seeded |
240 ml | apple juice |
80 g | couscous |
50 g | prunes, pitted, chopped |
50 g | dried apple, chopped |
60 ml | apple juice |
¼ tsp | cardamom, ground |
1 tbsp | maple syrup |
Instructions
Preheat oven to 180°C.Steam squash until tender, about 15 minutes. Drain and place in a large roasting pan.
Bring apple juice to a boil in a small saucepan, remove from heat and stir in couscous.Cover and let sit for 15 minutes so that the couscous absorbs the juice.
Add prunes, apples, apple juice, cardamom and maple syrup into the couscous.
Fill couscous mixture evenly into the squash halves and bake for 20 minutes.
