- Ingredients
- 1 cup sugar
- 1-1/2 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup shortening, softened
- 1/2 cup milk
- 1 egg
- 2 cups peeled and finely chopped apples (Granny Smith or Roman)
- Topping
- 1/2 cup brown sugar
- 2 Tablespoons butter or margarine, softened
- 2 teaspoons flour
- 2 teaspoons cinnamon
Instructions:
Sift sugar, 1-1/2 cups flour, salt, baking powder, and baking soda into a large mixing bowl. Add shortening, milk, egg, and apples and blend on medium speed until well blended. Pour into greased 9 x 9-inch baking pan or a round pie plate. Cream together all topping ingredients and spread evenly over batter.
Bake at 350 degrees for 30 minutes or until a toothpick inserted in the center comes out clean. If using a convection oven, bake for 35 minutes at 300 degrees. Serve warm.
For a large coffeecake: Add half again the ingredients, pour into a 9 x 13-inch pan, and bake for 40 minutes.
