3 medium | eggs |
6 medium | cooking apples, use up to 8 if necessary |
110 g | sugar, use up to 175g according to the tartness of the apples and the number used |
110 g | plain flour, white or wholemeal |
½ tsp | bicarbonate of soda |
a few drops of vinegar | |
cinnamon |
Instructions
Primarily includes apples, flour and sugar, it does not require the addition of any fat (other than for greasing) so could be a dessert for those on a low-fat diet.’Preheat oven to Gas Mark 6, 200°C, 400°F. Grease the sides and bottom of an 8-10 inch, 20-25cm springform cake tin.
Peel, core and cut the apples into fairly large chunks. Place in a bowl and sprinkle thoroughly with cinnamon. Set aside.
Beat eggs and sugar in a bowl. Transfer the baking soda to a larger spoon and add a few drops of vinegar. The baking soda will bubble and foam and turn into a paste. Add this to the eggs and sugar.
Sift in flour and mix until combined.
Pour one third of the flour mixture into the bottom and add a layer of apple. Repeat once more, finishing with a layer of apple.
Bake for 20 minutes and check if fully cooked. If not, reduce temperature to Gas Mark 4, 180C, 350F and cook for an extra 10 minutes. Conversely, if the top of the cake browns too quickly, cover it with foil to prevent burning.
Allow to cool in tin for about 10 minutes, then release tin. Allow to cool further and serve warm or cold.
