Apple baskets recipe details
- Ingredients for filling:
- 1/2 cup raisins, currants, or chopped dates
- 1/4 very finely chopped nuts
- 1-1/2 teaspoons ground coriander
- 2 to 4 apples
- Ingredients for making basket:
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- 1 cup whole grain cornmeal (often called “old fashioned”)
- 2 Tablespoons sugar
- 1 teaspoon salt
- 2 Tablespoons oil
- 1 cup water
To prepare the filling, combine the raisins (or currants or dates), nuts, and coriander in a bowl. Cut apples in half if large size and core out center. If apples are small, use the whole apple with cored out center. Set aside.
To prepare the baskets, mix the flours, cornmeal, sugar, and salt in a separate bowl. Then, thoroughly mix in the oil. Add the water, mixing just enough to moisten. Separate dough into 6 pieces.
To assemble the baskets,flatten out 1 piece of dough into a circle and mold around the bottom half of an apple. Insert filling from top and place apple basket in baking dish. Repeat with remaining apples. Bake at 350 degrees for 45 minutes or until apples are well baked.
