Apple and raisin kugel recipe details
Ingredients
250 g | tagliatelle or other similar ribbon noodles |
3 medium | eggs, beaten |
125 g | sugar |
1 tsp | cinnamon |
¼ tsp | ground nutmeg |
2 medium | dessert apples, peeled, cored and thinly sliced |
75 g | seedless raisins |
For the topping: | |
125 g | butter or margarine, melted |
125 g | brown sugar |
50 g | cornflakes, crushed quite small, but not to powder |
Instructions
Boil a large pan of lightly salted water and add the pasta. Boil until just soft but do not allow to become sticky. Drain and lightly rinse in cold water to remove any surplus salty water. Allow to drain for several minutes, shaking to assist.Preheat oven to Gas Mark 4, 180°C, 350°F.
Toss the apple slices with the spices and set aside.
Empty pasta into a large bowl. Mix in eggs and sugar and mix well. Add apple slices and raisins and mix in well.
Pour mixture into greased casserole dish or deep pie dish and level surface.
To prepare the topping:
Mix in melted butter or margarine and brown sugar together in a bowl. Add crushed cornflakes and mix thoroughly. Sprinkle over top of pudding and bake for 1-1¼ hours until well browned on top.
Serve immediately, with a little honey or jam, if wished.
Options:
Replace raisins with sultanas, dried cranberries or blueberries. Alternatively replace with chopped dried apricots, peaches or prunes.
