Apple and asparagus appetizer recipe details
Ingredients
500 g | asparagus, woody ends removed |
salt and pepper | |
9 sheet(s) | gelatin |
2 | apples, peeled, cored and sliced |
1 tbsp | butter |
2 | tomatoes, peeled and sliced |
1 dash(es) | sugar |
lemon juice | |
cayenne pepper |
Instructions
Cook the asparagus in salted water with a pinch of sugar until al dente. Drain and set aside, but reserve the broth. Season the broth to taste with salt, cayenne pepper and lemon juice.Soak the gelatin in cold water. Squeeze and dissolve in 500 ml of the still warm asparagus broth. Divide half of the liquid on the bottom of shallow wide dessert bowls and allow to set in the refrigerator.
Cut the asparagus into slices. Sauté the apple slices in butter. Gently mix together the apples, tomatoes and asparagus and allow to cool completely, then top the cold jelly with the mixture. Spoon the remaining gelatin broth over the topping.
Allow to set in the refrigerator before serving.
