Apple and apricot cake recipe details
Ingredients
For the dough: | |
330 g | flour |
3 tsp | baking powder |
150 g | sugar |
4 | eggs |
1 | lemon, grated rind |
150 ml | apple juice |
150 ml | oil |
For the filling: | |
½ jar(s) | apricot jam |
200 ml | apple juice |
1 packet(s) | jelly glaze |
1 tsp | sugar |
1 glass(es) | apple sauce, approx. 700 g |
For the topping: | |
200 g | single cream |
250 g | curd cheese |
To garnish: | |
25 g | coconut flakes, roasted |
Instructions
Sieve the flour and the baking powder into a bowl and combine with the sugar. Add in the eggs, the lemon rind, apple juice and the oil. Close the bowl with a lid and strongly shake the bowll. Make sure everything is well mixed.Preheat the oven to 180°C.
Spread the dough onto a greased baking tray (30*40 cm) and flatten. Transfer the baking tray into the oven and bake for approximately 25 minutes. Allow to cool on a wire rack.
Spread the apricot jam on the cake. Prepare the jelly glaze with the apple juice and the sugar. Stir in the apple sauce and spread the mixture over the jam and leave to get firm for at least 1 hour at a cool place.
For the topping whisk the single cream until stiff, then combine with the curd cheese.
Cut the cake into slices and put on each slice a teaspoon of the whipped cream and curd cheese mixture. Sprinkle with roasted coconut flakes and serve.
