Almond cream with strawberries recipe details
Ingredients
For the cream: | |
800 ml | milk |
100 g | almonds, blanched, ground |
100 g | sugar |
12 sheet(s) | gelatin |
400 g | single cream |
For the berries: | |
1 kg | strawberries |
2 tbsp | liquid honey |
100 ml | grapefruit juice |
Instructions
For the almond cream:In a saucepan, bring to the boil the milk with the almonds and sugar, stirring constantly. Remove from heat.
Soak the gelatin in cold water, squeeze and add to the still warm milk mixture. Dissolve and allow cool. As soon as the mixture thickens, whisk the single cream until stiff and fold in. Spoon the cream in a bowl and place in the fridge for at least 2.5 hours.
To serve:
Clean and slice the berries. Stir together the honey and the grapefruit juice and marinate the strawberries in the mixture for 5 minutes.
Drain the strawberries and arrange them flower-shaped on 8 dessert plates. Using a tablespoon, spoon out egg-shaped portions and place them on top of the strawberries, 2 on each plate.
Dust with icing sugar and serve.
