Alb ndigas recipe details
Ingredients
400 g | pork mince |
salt and freshly ground black pepper | |
150 g | toast, diced |
dry sherry | |
55 g | green olives, pitted and chopped |
1 | onion, chopped |
2 clove(s) | garlic, minced |
ground cumin | |
flour | |
1 | bay leaf |
2 tbsp | olive oil |
Instructions
Soak the toast in sherry. In a bowl, combine the minced meat, squeezed out bread, olives, onions and the garlic. Season with salt, pepper and cumin. Knead until well combined.Form the mixture to small meatballs. Roll the balls in flour and make sure they are coated all around. In a large pan, heat the oil. Add the bay leaf and fry the meat balls until golden brown and crispy all around.
Best served with a spicy tomato salsa.
