Ingredients
Serves: 6- For Meatballs:
- 2 pounds ground beef
- 1 egg
- 3 tablespoons water
- 1 cup bread crumbs
- 1 tablespoon chopped parsley
- For Soup:
- 3 cups water
- 3 beef bouillon cubes
- 1 quart tomatoes
- 1 envelope Lipton onion soup mix
- 1 cup sliced carrots
- 1/2 cup chopped celery
- 1/4 cup parsley
- 2 teaspoons Italian seasoning
- 2 bay leaves
Preparation method
Prep: 20 mins | Cook: 3 hours 20 mins1. Preheat oven to 450 degrees F.
2. Mix meatball ingredients together in mixing bowl, then form into walnut-sized balls. Place on baking sheet and bake for 14 minutes. Do not burn.
3. In a soup pot, combine all soup ingredients and bring to a boil over medium heat. Add meatballs and simmer for 2 hours (best when chilled and reheated next day).Ingredient Note
Do NOT omit parsley or bay leaves in this recipe. Use fresh if possible.
