A pot of spicy beans recipe details
If you’ve got a couple hours to sit in the house, simmer up some homemade beans.

Ingredients
Serves: 4- 1 cup dry pinto beans, soaked overnight
- 1/2 large yellow onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 jalapeno pepper
- 2 tablespoons olive oil
- 1 dried bay leaf
- 6 cups water (depends on pot depth)
Preparation method
Prep: 5 mins | Cook: 2 hours | Extra time: 8 hours, soaking1. Before you go to bed, put the beans in a large bowl with about a quart of water (they expand). Next day, take out any beans that are floating on top. These are duds. Strain off the water and put the beans in a bowl.
2. Mince the jalapeno. (Note: if you wear contacts like I do, put a plastic bag over your hands when you handle the jalapenos. Otherwise the heat sticks to your hands and you get a horrible surprise when you go to take your contacts out. I learned this the hard way. Several times.)
3. Pour the olive oil in a large, thick-bottomed pan and turn the heat to medium high. When the oil is hot, put in the onions, garlic, and salt. Cook until the onions are soft, about five minutes.
4. Put in the dried, strained beans. Stir a bit. Add enough water to cover the beans by about an inch. Add the cumin, oregano, jalapenos, and bay leaf. Bring to a boil, then reduce the heat to a simmer.
5. Simmer the whole pot of goodness for two hours, stirring occasionally. You may need to add more water.
