- Ingredients – French Toast
- 2/3 cup blueberries, fresh or frozen
- 1 cup brown sugar, packed
- 5 Tablespoons butter
- 2 Tablespoons light corn syrup
- 6 to 8 slices French bread (3/4 inch thick)
- 4 eggs
- 1 cup milk
- 1 teaspoon almond extract
- 1 teaspoon vanilla
- Ingredients – Blueberry Glaze:
- 1 cup blueberries
- 2 Tablespoons brown sugar
- 1 to 2 teaspoons corn starch
- 1/8 teaspoon almond extract
- 1/4 cup melted butter
French Toast: In a saucepan, cook and stir together the brown sugar, butter, and corn syrup until the butter melts and is smooth. Pour this mixture into an ungreased 8 x 8 x 2-inch baking dish. Place blueberries in a single layer covering the brown sugar mixture. Place the bread slices on top of the blueberries. You may have to cut the bread slices to fit the pan. Beat the eggs in a medium mixing bowl with the milk, almond extract, and vanilla. Pout this mixture over the bread and blueberries in the baking dish. Cover with plastic wrap and refrigerate overnight.
Remove the plastic wrap and brush top of bread with 3 tablespoons butter. Bake in a 375-degree oven for 30 to 35 minutes until bread is raised, set, and lightly browned. Prepare blueberry glaze while toast bakes.
Blueberry Glaze: In a small saucepan, combine blueberries, brown sugar, butter, cornstarch, and almond extract. Cook over medium heat, stirring, until sauce is bubbly and thick. Pour over baked toast and serve.
