|400 g||wheat flour|
|400 g||spelt flour|
|75 g||flax seed|
|1 tbsp||bread spice|
|40 g||fresh yeast|
|700 ml||warm water|
Dissolve the yeast with salt and sugar in the lukewarm water. Works best with a hand blender.
In a large bowl, mix the flours, flax seed and millet with the bread spice. Add the yeast water to the flour and knead well. You may need to add a bit more flour if the dough is sticky. When smooth and pliable, transfer the dough into a greased baking tin and brush with water. Sprinkle with a little millet.
Put in the cold oven. Switch to 190°C and bake for 60 minutes (fan off!).
When baked, remove the bread immediately from the baking tin and let cool down on a rack.
