Fish is better with bacon! Try this delicious foil-wrapped recipe where a smoky mayonnaise-chive coating keeps the fish nice and moist. This recipe also works well with mahi mahi, swordfish, and tuna steaks.

Ingredients

Serves: 6
  • 3/4 cup mayonnaise
  • 2 tablespoons fresh or dried chopped chives
  • 1 teaspoons fresh lemon juice
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (2 pound) boneless fish fillet such as salmon or halibut
  • 2 tablespoons crumbled, cooked bacon

Preparation method

Prep: 10 mins | Cook: 10 mins

1. Preheat grill for medium heat.
2. Stir the mayonnaise, chives, lemon juice, liquid smoke, seasoned salt, and pepper together in a small dish; set aside. Spray a 2-foot length of heavy duty aluminum foil with nonstick cooking spray.
3. Spread the skin side of the fish fillet with 1/3 of the mayonnaise mixture, and place skin-side-down onto the aluminum foil. Spread the remaining mayonnaise mixture evenly over the top of the fish, then sprinkle with bacon. Fold the foil over the top to seal.
4. Cook, covered on the preheated grill until the fish is no longer translucent in the center 10 to 25 minutes depending on the kind of fish, and the heat of the grill, etc.
