Ingredients

7 g dried yeast
2 tbsp water
1 pinch(es) sugar
200 g plain flour and some for kneading
2 tbsp olive oil
½ tsp salt
125 ml water
1 tbsp olive oil to apply on dough
For the topping:
300 g big white onions, finely sliced into rings
100 g Pecorino cheese, freshly grated
1 tsp oregano, dried or 2 tsp fresh oregano
4 tbsp olive oil
some salt
some freshly ground black pepper

Instructions

Stir yeast, water and sugar in a small bowl and set aside for about 10 minutes until bubbling.

Mix the yeast mix with flour, oil and salt. Slowly stir in the water and knead the dough on a well floured surface until smooth and elastic.

Put the dough inside a bowl and cover with a kitchen cloth. Set aside in a warm place and let rise until the dough volume is doubled.

Knead the dough on a floured surface strongly and place in a thin layer on a lightly oiled small baking tray.

Brush with 1 tbsp olive oil, arrange the onion rings and spread with cheese and oregano.

Sprinkle with 4 tbsp olive oil and bake in a preheated oven (225ºC) for about 25 minutes until crispy golden brown.

Serve immediatly, sprinkle with a little salt and a lot of freshly ground black pepper.
