Ingredients

1 ½ kg green tomatoes, thinly sliced
450 g raisins
2 large apples, cored, peeled, chopped
1 large orange, cored, peeled, chopped
60 ml apple cider vinegar, boiling hot
200 g sugar
450 ml corn syrup
2 tbsp Pumpkin Pie Spice
50 g salt

Instructions

Place sliced tomatoes in a bowl and season with salt. Let stand overnight.

The next day, rinse, drain and rinse quickly again.

Soak the raisins in 60 ml of boiling hot cider vinegar for 15 minutes.

Chop the tomatoes into small pieces or process in a blender.

Place all ingredients in a large non-aluminium kettle. Cover and let simmer for 40 minutes.

Uncover the pan and allow the mincemeat to boil gently for 1 hour and 15 minutes. Stir occasionally.
