Durban curry prawns recipe details
Ingredients
500 g | prawns, cooked and peeled |
120 g | butter |
2 medium | onion, chopped |
2 tbsp | flour |
300 ml | tomato juice |
2 tsp | curry powder, or more |
1 medium | cucumber, peeled and diced |
2 clove(s) | garlic, crushed |
2 tsp | mango chutney |
75 ml | cream |
400 g | tomato, skinned and chopped |
some | salt and freshly ground black pepper, to taste |
Instructions
Melt butter and sauté onion and garlic over low heat until soft. Stir in flour and curry powder. Keep heat low and cook for three minutes, stirring all the time.Add tomato juice, followed by chopped tomatoes and diced cucumbers, stirring all the time.
Simmer uncovered until the cucumber is just tender. Add prawns and chutney, stir in cream and heat through.
Season with salt and pepper.
Serve with rice.
