The Pain Perdu recipe is a classic French dish that transforms stale bread into a delicious breakfast or brunch treat. Made by soaking slices of bread in a mixture of eggs, milk, and sugar, then frying them until golden brown, Pain Perdu is a simple yet indulgent dish. The crispy exterior and soft, custard-like interior make it a crowd-pleaser.

Ingredients
4 large eggs
2 cups milk (or 1 cup milk and 1 cup cream)
1/3 cup sugar
8 ounces marmalade
1/3 cup orange juice concentrate
1/2 ounce brandy extract or brandy
French bread
Orange Cream:
1 cup heavy whipping cream
1/4 cup sugar
1/3 cup orange juice concentrate
Instructions:

Mix eggs, milk, sugar, marmalade, concentrate, and brandy extract in a large bowl with an electric mixer. Cut bread into 1-inch thick slices and dip into custard mixture. Then place slices in flat pan 1-1/2 to 2 inches deep. Pour remaining custard mix over the bread slices. Cover pan with foil and refrigerate overnight, turning bread over once.

Spray electric skillet or griddle with non-stick cooking spray. Heat to 225 to 275 degrees and cook bread for 30 minutes on each side. Serve with warm maple syrup or Orange Cream.

Orange Cream: Beat together until thick.

Serves:4 to 6 (2 slices per person).
