Zucchini sauce

Zucchini Sauce
Ingredients
3 large | zucchini, grated |
4 clove(s) | garlic, minced |
300 ml | vegetable broth |
50 g | butter, softened |
salt and pepper, to taste | |
olive oil | |
salt and pepper, to taste |
Instructions
Heat some olive oil in a large frying pan. Add the garlic and sauté for a couple of minutes.Add the grated zucchini, stirring continuously.
Add the stock and allow to simmer until the zucchini are softened.
When the zucchini are soft, remove from heat and leave to cool a little. Process in a blender together with the butter and return mixture to the pan. Season with salt and add pepper.
Serve with pasta or chicken.
