Zucchini melon salad recipe details
Ingredients
2 | zucchini |
1 tsp | salt |
2 | wedges honeydew melon, seeded, peeled |
1 | chicken breast, skinless, boneless |
100 g | Parmesan cheese, grated |
60 ml | olive oil |
60 ml | lime juice |
fresh mint leaves, chopped |
Instructions
Fry chicken until cooked through and set aside. Cut into smaller pieces to be divided.Cut zucchini into thick slices and transfer to a colander set over a bowl. Sprinkle with salt, tossing to coat. Let stand 5 minutes, then rinse under cold water. Pat dry with paper towels.
Cut melon wedges into thick slices.
Divide melon, zucchini, and chicken among 4 plates. Drizzle each plate with oil, lime juice and Parmesan cheese.
