Zabaglione with fresh berries recipe details
Ingredients
5 medium | eggs, yolks only |
60 g | granulated sugar |
80 ml | Marsala wine or Grand Marnier |
240 ml | whipping cream, whipped |
900 g | a mix of fresh berries: blackberries, blueberries, strawberries, raspberries |
Instructions
Set up a double boiler place a stainless-steel bowl over a pot of simmering water. Make sure that the water does not touch bottom of bowl.In a bowl, beat the egg yolks and sugar together approximately until pale yellow.
Slowly whisk in the Marsala wine and set the bowl over the barely simmering water.
Continue to beat constantly, approximately 10-15 minutes, until the mixture thickens. The eggs will slightly stiffen but still hold the air. Do not stop whipping or the the eggs might start to scramble.
Remove from heat and cool the mixture completely in the refrigerator. When cooled, fold in prepared whipped cream.
To serve, place a dollop of the zabaglione in a dessert glass and add fresh berries.
