Yukon gold potato pancakes recipe details
Creamy Yukon Gold potatoes make terrific potato pancakes. Serve with sour cream or something sweeter.

Ingredients
Serves: 4- 6 tablespoons butter, melted
- 2 pounds Yukon Gold potatoes, sliced very thinly
- 1/4 cup chopped flat leaf parsley
- Salt and pepper, to taste
Preparation method
Prep: 20 mins | Cook: 40 mins1. Preheat oven to 400 degrees F. Coat a seasoned large cast-iron skillet with 1 or 2 teaspoons melted butter and set over medium-low heat.
2. While skillet heats, form one layer of the potato slices in the skillet. Let the slices overlap each other and use about 1/3 of the total potatoes. Press down on the layer of potatoes to pack them in, firmly.
3. Drizzle with 1/3 of the melted butter, sprinkle with 1/3 of the parsley, and add salt and pepper to taste. Then pack on another layer of the potato slices and top with more butter, parsley, salt, and pepper. Repeat layers.
4. Turn heat up to medium. When the bottom layer of potatoes has browned well, cover the cast-iron skillet with aluminum foil and place in oven. Cook for 15 minutes.
5. Turn oven temperature up to 450 and take the foil off the skillet. Cook for another 20 minutes. Potatoes should be tender and browned.
6. Turn the cooked potato pancake out onto a plate, slice, and serve.
