- Ingredients
- 12 ounces stripped and cut salmon
- Fresh lemon juice
- Salt and pepper
- Potatoes
- 1 teaspoon oil
- 1/2 cup yellow peppers
- 1/2 cup red peppers
- Fresh tarragon
- Fresh thyme
- 1 Tablespoon parsley
- Eggs
- Capers
- Serrano pepper, optional
Remove all bones from salmon. Squeeze lemon juice on salmon and sprinkle with salt and pepper. Grate potatoes, lightly oil, and add salt and pepper in a bowl. Cover and shake. Place in a 250-degree oven for 20 minutes. In a wok, stir fry in oil red and yellow peppers, tarragon, thyme, parsley, and serrano pepper if desired. Pour peppers over potatoes. Poach salmon. Scramble eggs. Layer mix in large pan and add capers.
