Ingredients

1 kg boneless, skinless chicken breast
24  scallions
short bamboo skewers
For the marinade:
120 ml rice wine
120 ml soy sauce
1 tbsp fresh ginger, grated
1 tbsp sugar

Instructions

Combine the rice wine, soy sauce, ginger and sugar in a medium bowl and set aside.

Cut the chicken into cubes and add to the marinade. Marinate the chicken in the refrigerator for about 1 hour.

In the meantime trim the green onions and cut them into small pieces.

Remove the chicken from the marinade. Reserve the liquid for basting in a separate bowl.

Alternately thread the chicken and green onions onto the skewers.

Place the skewers on a broiler pan and broil, basting often until the chicken is just cooked through, about 6 minutes.
