Ingredients

500 g	asparagus, woody ends removed, cut into 3cm pieces
200 g	carrots, pelled and sliced
30 g	ginger, grated
1	red hot chilli pepper, chopped
400 g	chicken breast fillet, cut into strips
3 tbsp	sesame seeds, toasted
6 tbsp	soy sauce
125 ml	rice wine
2 tsp	sesame oil
2 tbsp	groundnut oil
	salt
250 g	snow peas

Instructions

In a wok, heat the groundnut oil. Stir-fry the meat until golden all around. Remove from the wok and set aside. Add the asparagus and the carrots into the wok and sear for 2-3 minutes. Add the snow peas, ginger and chilli and stir-fry for another minute.

Pour in the soy sauce, sesame oil and the rice wine. Return the meat and cook just until hot again. Serve immediately, sprinkled with sesame seeds.
