Winter vegetable soup with egg recipe details
Ingredients
200 g | cabbage |
200 g | cauliflower |
200 g | carrots |
200 g | turnips |
200 g | sweet potatoes |
200 g | brussel sprouts |
200 g | broccoli |
2 medium | onions, chopped |
2 sprig(s) | parsley |
2 medium | eggs, optional |
vegetable broth |
Instructions
Peel, slice, cube and cut vegetables. Brussel sprouts leave whole.Put vegetables and parsley springs in a large pot and add enough water to cover all. Add stock cubes and cook over medium heat until vegetables are tender.
Add salt and pepper to taste.
Purée vegetables with a hand-held blender or process in a blender in batches.
While hot and still cooking over medium heat, break eggs into the soup and stir until egg is cooked. Serve.
