Winter cake recipe details
Ingredients
For the cake: | |
5 medium | eggs |
60 g | sugar |
70 g | flour |
180 g | chocolate chips |
60 ml | water |
For the Filling: | |
300 ml | whipping cream |
20 g | cocoa |
1 large can(s) | sliced peaches |
50 g | almonds, blanched |
1 tsp | mint extract |
Instructions
Cake:Combine eggs and sugar and beat until smooth and of thickening consistency. Gradually add the flour.
Melt the chocolate and the water in a bowl over simmering water. Stir together to blend to smooth consistency.
Fold the chocolate mixture into the cake batter.
Grease 22cm springform pan and fill with the batter and preheat oven to 180°C.
Bake the cake for 40-45 minutes.
When cooled completely, remove cake from the springform and carefully split the cake into two even slices.
Filling:
Combine cream, mint extract and cocoa until stiff.
Drain the sliced peaches and mix with the cream. Add sliced almonds.
Spread filling on to bottom half of the cake and then top with the other half.
Chill before serving.
