Ingredients

230 g candied pineapple
100 g chopped almonds
115 g shredded coconut
200 g cake flour
2 tsp baking powder
115 g butter
160 g sugar
120 ml milk
6 medium eggs, whites only

Instructions

Sift flour and baking powder into a bowl.

In another mixing bowl cream butter with sugar until light and fluffy. Stir dry ingredients, alternating with the milk. Beat well.

Add the candied fruit, almonds and the coconut.

In a separate bowl, beat egg whites until stiff peaks form. Fold into batter.

Preheat oven to 150°C.

Line a greased loaf pan with parchment paper. Grease the paper. Spoon batter into the prepared pan and bake for about 90 minutes.
