White fruitcake recipe details
Ingredients
230 g | candied pineapple |
100 g | chopped almonds |
115 g | shredded coconut |
200 g | cake flour |
2 tsp | baking powder |
115 g | butter |
160 g | sugar |
120 ml | milk |
6 medium | eggs, whites only |
Instructions
Sift flour and baking powder into a bowl.In another mixing bowl cream butter with sugar until light and fluffy. Stir dry ingredients, alternating with the milk. Beat well.
Add the candied fruit, almonds and the coconut.
In a separate bowl, beat egg whites until stiff peaks form. Fold into batter.
Preheat oven to 150°C.
Line a greased loaf pan with parchment paper. Grease the paper. Spoon batter into the prepared pan and bake for about 90 minutes.
