1. White chocolate, broken into pieces (250gms)
2. milk (25ml)
3. unsalted butter, melted (5gms)
4. eggs, separated (6)
5. caster sugar (40gms)
6. cocoa powder (for dusting)
7. vanilla extract (1tsp)
8. double cream (50ml)
For Raspberry Sauce Ingredients
1. Icing sugar (2tbsp)2. lemon juice (1tbsp)
3. raspberries (375 gms)
Method of preparation
1. Take 6 oven proof soufflé dishes of 150ml, apply the melted butter on the base of the dishes and then place the dishes on the baking sheet.
2. Take a heatproof bowl, put white chocolate, milk and double cream in it and place it over the pan of simmering water until the chocolate gets melted. Mix it lightly to blend. Then mix egg yolks, sugar and vanilla into the mixture of chocolate and cream.
3. Take a large bowl, beat egg whites in it until the peaks get formed. Then add the ¼ of egg whites into the chocolate sauce with spoon mix it and then add the rest of the egg whites in it.
4. Now pour the mixture into the dishes and then place in oven to bake for about 15 to 20 minutes at 400 degrees F until they get risen and change to golden color.
5. To make Sauce; take a blender; lightly blend the raspberries in it. Take a saucepan, press the blended cherries through sieve in it and throw out the pips.
6. Then mix icing sugar and lemon juice in it and heat the mixture. When the soufflés get baked then sprinkle the cocoa powder over it and serve at once with the prepared sauce.
