White and dark chocolate parfait recipe details
Ingredients
120 g | dark chocolate, grated, at room temperature |
50 g | white chocolate, grated |
2 | egg yolks |
1 | egg |
50 g | sugar |
275 g | whipping cream |
Instructions
Set 20 g of the grated dark chocolate aside and melt the remaining dark chocolate. Melt separately the white chocolate.Whisk the egg with egg yolks and sugar in a hot water bath until frothy. Divide the egg froth into 2 bowls. To one bowl add the white chocolate and to the other bowl the dark chocolate and stir until well combined. Allow to cool, stirring occasionally.
Whip the cream until stiff and fold in equal parts in the two chocolate mixtures. Line a triangle terrine form with cling film and pour in the white chocolate mixture. Freeze for 30 minutes, then pour in the dark chocolate mixture and freeze for 5 hours.
Turn the parfait out of the form and cut into pieces. Serve garnished with the remaining chocolate.
