Welsh honey cakes recipe details
Ingredients
125 g | honey |
1 tsp | ground cinnamon |
125 g | brown sugar |
1 medium | egg, separated |
225 g | plain flour |
½ tsp | bicarbonate of soda |
125 g | butter |
caster sugar and milk, to glaze |
Instructions
Preheat the oven to Gas Mark 7, 220°C, 425°F.Cream the butter and sugar together in a bowl. Add the yolk and beat well. add the honey gradually and beat again.
Stir in the flour with a little milk sufficient to create a batter.
Whisk the egg white until stiff and fold into mixture.
Spoon the mixture into a greased small bun tin or muffin tin until the cups are about half full. Sprinkle with a little caster sugar and bake for 20 minutes until risen and springy to the touch.
While hot, glaze with a little sugar mixed with a little milk.
Allow to cool before serving.
