Welsh cawl recipe details
Ingredients
½ tbsp | beef or lamb dripping, margarine or butter |
3 small | onions, chopped |
2 medium | parsnips, chopped |
4 medium | carrots, sliced |
5 medium | leeks, cleaned and sliced |
4 clove(s) | garlic, minced |
500 g | diced lamb |
500 g | potatoes, peeled and quartered |
salt and fresh ground pepper, to taste |
Instructions
Heat a large pot over a medium heat and melt the fat. Add the onions, parsnips, carrots, leeks and garlic. Sauté until soft and barely coloured. Remove the pan from the heat and drain the vegetables with a slotted spoon and set aside.Add the lamb to the pot and brown evenly on all sides. Once well browned, drain off excess fat and return the vegetables to the pot. Add the potatoes and cover with water. Bring to a boil, cover and reduce heat and simmer for 2 hours or until required.
Serve piping hot.
