Watercress and parmesan salad with red currant dressing recipe details
Ingredients
100 g | mushrooms, sliced |
olive oil | |
60 ml | red currant jelly |
2 tbsp | white vinegar |
300 g | watercress sprigs |
40 g | Parmesan cheese, grated |
1 tbsp | parsley |
salt and pepper, to taste |
Instructions
Heat oil in a frying pan and sauté mushrooms until soft.Combine mushroomes, the red currant jelly and white vinegar in a bowl, season with salt and pepper and toss to coat.
Add watercress, cheese and parsley and toss gently to combine. Serve immediately.
