Washington apple pie recipe details
Another type of apple pie. My mother-in-law, Maureen, who taught me how to make a pie crust, always used cold milk as liquid for her excellent pie crusts.

Ingredients
Serves: 6- 2 cups flour
- 1 teaspoon salt
- 2/3 cup shortening or lard
- 3 tablespoons (more or less) cold liquid (ice water, milk, or orange juice)
- Flour (for board)
- 1 cup sugar
- 1-1/2 teaspoons cornstarch or 2 tablespoons flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional)
- 6 – 7 cups apples, peeled and cored, sliced lengthwise into 1/2-inch wedges
- 1 tablespoon lemon juice
- 1 – 2 tablespoons butter
Preparation method
Prep: 45 mins | Cook: 1 hour1. Preheat oven to 425 degrees F (220 degrees C).
2. Place flour and salt in a bowl. Mix in shortening with a fork or pastry mixer until the mixture is broken up into small, pea-sized pieces. Add liquid gradually. When mixture is slightly stiff, form into a ball with your hands. Flour a board, and divide dough into 2 balls. Roll 1 out for bottom crust and 1 for top crust. Dough should be rolled out to about 1/8 inch thick. Place bottom crust in a 9-inch pie pan. Set aside top crust until you’ve filled pie.
3. To prepare filling, mix the sugar, flour or cornstarch, cinnamon, and nutmeg (if used) in a bowl. Add the apple slices and lemon juice. Mix well so slices are evenly coated. Place in pie crust and dot with butter. Gently place top crust over filling. Crimp to seal edges, and make slits in the top crust for steam to escape.
4. Bake at 425 degrees F for 60 minutes. Remove from oven and cool on a wire rack. Serve the pie slightly warm.
