Ingredients

1 stalk(s) leek, trimmed and sliced
2  carrots, peeled and sliced
1 bulb(s) celeriac, peeled and chopped
1 handful Brussels sprouts, trimmed
1 small red bell pepper, cleaned and sliced
3  potatoes, peeled and diced
1  onion, peeled and chopped
2 clove(s) garlic, chopped
1 piece(s) ginger, approx 3cm, grated
500 ml vegetable stock
160 ml coconut milk
cayenne pepper
salt and pepper
some oil

Instructions

Heat oil in a large saucepan and sauté onion, garlic and ginger until translucent. Deglaze with vegetable stock and coconut milk and bring to a boil. Add all the vegetables and bring to the boil again. Reduce heat and simmer covered for 20 minutes.

Season to taste with cayenne pepper, salt and pepper.
