Warming vegetable stew recipe details
Ingredients
1 stalk(s) | leek, trimmed and sliced |
2 | carrots, peeled and sliced |
1 bulb(s) | celeriac, peeled and chopped |
1 handful | Brussels sprouts, trimmed |
1 small | red bell pepper, cleaned and sliced |
3 | potatoes, peeled and diced |
1 | onion, peeled and chopped |
2 clove(s) | garlic, chopped |
1 piece(s) | ginger, approx 3cm, grated |
500 ml | vegetable stock |
160 ml | coconut milk |
cayenne pepper | |
salt and pepper | |
some | oil |
Instructions
Heat oil in a large saucepan and sauté onion, garlic and ginger until translucent. Deglaze with vegetable stock and coconut milk and bring to a boil. Add all the vegetables and bring to the boil again. Reduce heat and simmer covered for 20 minutes.Season to taste with cayenne pepper, salt and pepper.
