Ingredients
800 g | pork neck, cut into 3cm cubes |
4 | onions, chopped |
8 | carrots, peeled and sliced |
2 stalks | celery, finely sliced |
8 | potatoes, peeled and cut into 3cm cubes |
2 tbsp | oil |
1 | bay leaf |
3 tsp | hot paprika powder |
2 tsp | caraway |
salt | |
soy sauce | |
½ bunch(es) | parsley, chopped |
1 shot(s) | dry vermouth (Noilly Prat) |
Instructions
In a large saucepan heat the oil and sear the meat over high heat until slightly browned. Add the onions and keep frying until golden. Deglaze with a generous shot of Noilly Prat. Cook until evaporated. Add the potatoes and carrots and the bay leaf. Add water until all is just covered. Season with salt, pepper, caraway and paprika powder. Bring to the boil and simmer over low heat for 15 minutes. Add celery and cook for another 3 minutes.Season to taste with light soy sauce and serve sprinkled with parsley.
