Ingredients

1 kg	cherry tomatoes, blanched, peeled or chopped
120 ml	vodka
3 tbsp	white wine vinegar
1 tbsp	sugar
1 tsp	grated lemon zest

Instructions

Combine vodka, vinegar, sugar, and zest in a small bowl and stir until sugar has dissolved.

Pour over tomatoes, gently tossing to coat. Marinate for at least 30-50 minutes.

Remove tomatoes from marinade and either use in a salad or as a side dish or appetizer with a creamy dip.
