Ingredients

  1. Eggs – 4 (beaten)
  2. Vermicelli – 1 packet
  3. Onion – 1 (chopped)
  4. Green chilies – 4
  5. Coriander leaves (hara dhania) – ¼ cup (chopped)
  6. Bay leaves (karri patta) – 6
  7. Salt – to taste
  8. Turmeric powder – ½ tsp
  9. Ginger/garlic paste – 2 tsp
  10. Oil – 2 tbsp

Instructions

  1. Cut green chillies down their center and de-seed
  2. Heat oil in a pan, add vermicelli and cook until golden
  3. Take out in a plate
  4. In the same pan put onion and cook until tender
  5. Add ginger/garlic and fry
  6. Add eggs and stir quickly while cooking
  7. Add green chilies, coriander leaves, turmeric powder, bay leaves and a pinch of salt.
  8. Mix in vermicelli
  9. Add 1 cup of water and cook for 5 to 6 minutes
  10. Serve hot
