Venison with mashed potatoes and apples recipe details
Ingredients
8 venison chops, from the leg, approx. 70g each |
salt and pepper |
2 shallots |
170 g butter |
40 g breadcrumbs |
1 bunch(es) fresh thyme, finely chopped leaves |
20 g freshly grated horseradish |
800 g potatoes, peeled and quartered |
200 g single cream |
freshly ground nutmeg |
2 tart apples |
Instructions
For the mashed potatoes boil the potatoes in salted water until done. Drain and press through a potato ricer. Heat the single cream. Stir the cream together with 80g butter into the mash. Season to taste with salt, pepper and nutmeg and keep the mash warm.Peel the apples, remove the core, then cut the apples into thick slices. In a skillet, heat 30g butter and gently sauté the apples, take care not to break the slices.
Flatten the medallions a bit and season with salt and pepper. Sauté in 20g hot butter for approximately 1 minute on each side.
Preheat the broiler of your oven.
Peel and finely dice the shallots and gently sauté in 40g butter until soft. Combine with the breadcrumbs and the thyme. Evenly divide the mixture on the medallions and sprinkle with horseradish. Place the medallions into a shallow casserole dish and grill under the broiler for approximately 2 minutes.
Serve with the mashed potatoes and the apples.
