Ingredients
150 g | mushrooms, sliced |
2 | onions, peeled, chopped |
2 tbsp | butter |
240 ml | vegetable broth |
1 tbsp | fresh parsley, chopped |
¼ tsp | salt |
¼ tsp | freshly ground pepper |
2 ½ tbsp | flour |
240 ml | single cream |
Instructions
In a medium saucepan, sauté mushroom slices and onion in butter over medium heat, about 5 minutes. Add broth, parsley, salt and pepper. Reduce heat and simmer for another 2-3 minutes.
Blend flour with 4 tablespoons of cream and whisk until smooth. Whisk in the remaining cream and pour into the vegetable mixture. Bring to a gentle boil, then reduce heat to simmer. Continue to cook and stir just until thickened.
