Vegetable Gravy recipe

|150 g||mushrooms, sliced|
|2||onions, peeled, chopped|
|240 ml||vegetable broth|
|1 tbsp||fresh parsley, chopped|
|¼ tsp||freshly ground pepper|
|2 ½ tbsp||flour|
|240 ml||single cream|
In a medium saucepan, sauté mushroom slices and onion in butter over medium heat, about 5 minutes. Add broth, parsley, salt and pepper. Reduce heat and simmer for another 2-3 minutes.
Blend flour with 4 tablespoons of cream and whisk until smooth. Whisk in the remaining cream and pour into the vegetable mixture. Bring to a gentle boil, then reduce heat to simmer. Continue to cook and stir just until thickened.
