Vegetable frittata recipe details
Ingredients
500 g | mixed vegetables |
8 large | eggs |
3 tbsp | Parmesan cheese, grated |
some | olive oil |
some | water |
some | Italian seasoning |
some | salt and freshly ground pepper, to taste |
Instructions
Preheat the oven to 200°C.In a large ovenproof skillet, heat the olive oil over medium heat. Add the frozen or fresh vegetables and water, cover. Cook, stirring often, until heated through and all the liquid has evaporated.
In a large bowl, beat together the eggs, herbs, salt, and pepper.
Add more olive oil to the skillet and pour the egg mixture over the vegetables and cook over medium-low heat, stirring occasionally, until the edges are set.
Sprinkle the Parmesan over the top and then transfer the skillet to the oven and bake for about 8 to 10 minutes.
