Ingredients
Serves: 4- 10 ounces fresh fava beans, shelled
- 1 pound potatoes, peeled and diced
- 1 large parsnip, peeled and diced
- 2 carrots, peeled and diced
- 2 medium onions, diced
- 1/2 pound bacon, chopped
- 10 ounces tomato juice
- Salt and pepper, to taste
- 2 tablespoons Worcestershire sauce
Preparation method
Prep: 10 mins | Cook: 1 hour 30 mins | Extra time: 8 hours, freezing1. Preheat oven to 350 degrees F and coat a 9×12-inch baking dish with nonstick cooking spray.
2. Place beans, potatoes, parsnip, carrots, and onion in the prepared baking dish.
3. In a skillet over medium heat, cook the bacon for 2 minutes. Transfer to baking dish along with tomato juice, then sprinkle the casserole with salt and pepper.
4. Bake for 90 minutes, then remove from oven. Let the casserole come to room temperature, then cover with foil and freeze overnight. The day you want to serve the dish, thaw, reheat in the oven, and add the Worcestershire sauce.
