Vegetable and rice casserole recipe details
Ingredients
500 g | brown rice |
1 ½ l | salted water |
4 medium | zucchini, approx. 200g each |
2 | onions |
3 clove(s) | garlic |
6 tbsp | olive oil |
salt and pepper | |
Italian herbs | |
50 g | butter |
paprika powder | |
8 | tomatoes |
250 g | mozzarella cheese |
Instructions
Preheat the oven to 220°C.Cook the rice until done. Rinse and drain. Slice the zucchini and tomatoes. Dice the onions and the garlic.
In a skillet sauté the onion and garlic until lucent, then add the zucchini slices and sauté over low heat for a few minutes.
Spoon the rice in a large, shallow casserole dish. Fold in the butter and season to taste with salt, pepper and paprika. Flatten the rice. Arrange the slices of zucchini and tomatoes on top, together with the sautéed onion and garlic. Season with salt, pepper and Italian herbs. Dice the Mozzarella and sprinkle on top.
Bake for 15 minutes.
