Ingredients
200 g | butter, unsalted |
100 g | icing sugar |
2 | egg yolks |
5 ml | vanilla essence |
250 g | cake flour |
For Decoration: | |
silver and gold balls | |
chocolate sprinkles | |
almond flakes | |
bits of red glace cherries | |
For the Icing: | |
250 ml | icing sugar |
60 ml | lemon juice |
Instructions
Beat butter, icing sugar and egg yolks until thick and creamy, then fold in vanilla essence and flour. Wrap dough in cling film and refrigerate for 30 minutes.Preheat oven to 160ºC.
Roll out dough to 5 mm thick on a floured surface and cut out with tree-shaped biscuit cutter. Place on a lightly greased baking sheet and bake for 15-20 minutes, or until golden. Remove and cool on a wire rack.
Mix icing sugar and lemon juice and use to ice trees. Decorate with silver balls, chocolate sprinkles, flaked almonds and cherries.
Store in a tin lined with greaseproof paper. Makes about 30 biscuits, depending on the size of your cookie cutter.
