Vafa's potato spinach pide recipe details
French fries top slices of crusty bread and which are then topped with roasted spinach and feta cheese and baked until everything is melty in this tasty hot sandwich. Serve with tomato ketchup.

Ingredients
Makes: 2 sandwiches- oil for frying
- 2 potatoes, cut into French fry strips
- 3 tablespoons butter or olive oil
- 4 cloves garlic, minced
- 1/2 cup roasted spinach
- 4 ounces feta cheese
- 1 egg, beaten
- 1 tablespoon mustard
- 1/2 teaspoon curry powder
- 1/2 teaspoon ground dried thyme
- pinch cayenne pepper
- salt and freshly ground black pepper to taste
- 2 slices crusty bread
- 2 slices mozzarella or Parmesan cheese
Preparation method
Prep: 20 mins | Cook: 20 mins1. Preheat frying oil to 375 degrees F. Preheat oven to 325 degrees F. Line a baking sheet with aluminum foil.
2. Cook the potato strips in the hot oil until tender in the center and crispy on the outside. Drain on a paper towel-lined plate.
3. Melt the butter in a small skillet or saucepan over medium heat. Stir in the garlic, and cook gently for 2 minutes. Gently combine the garlic butter with the spinach, feta cheese, and egg in a bowl. Season with mustard, curry powder, thyme, cayenne pepper, salt and pepper.
4. Place the bread slices on the baking sheet, and pile the French fries on top. Spoon the spinach mixture over the fries, then top with cheese.
5. Bake in the preheated oven until the cheese has melted and the pide is hot, about 10 minutes.
