Twice baked sweet potatoes are a delicious side dish for your thanksgiving feats or an time you are serving roasted or baked turkey. These are also excellent with Caribbean meals and can be finished on the grill.

Ingredients
Serves: 12- 6 medium yams, lightly baked
- 2 large eggs, lightly beaten
- 1 stick butter, softened
- 1 cup coconut, divided 3/4 and 1/4
- 1 cup pecans, chopped, divided 3/4 and 1/4
- 1 cup raisins
- 1 apple, peeled cored and chopped
- 3 tablespoons brown sugar
- 2 teaspoons allspice
- 2 tablespoons honey
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 30 mins, other1. preheat oven to 325 F
2. Cut yams in half lengthwise, scoop all but a 1/4 of the meat from yams. Dice meat and set shells aside.
3. combine meat from yams with, butter, 3/4 cup coconut, 3/4 cup pecans, raisins, apple, brown sugar, allspice and honey.
4. spoon mixture back into yam shells and top with combined 1/4 cup coconut and 1/4 cup pecans.
5. Bake for 30 minutes and remove from oven. Allow to rest for 5 minutes before serving.Alternate method
